Abstract: Liquid emulsifiers for bread are prepared by blending diacetyl tartaric acid esters of unsaturated vegetable oil or animal fat, monoglycerides, unsaturated vegetable oil, and propylene glycol monoester of unsaturated vegetable oil or animal fat. Bread prepared from these emulsifiers exhibit excellent physical characteristics.
